Microsoft Flightsimulator.
I think the system is well optimised.
MSFS also has the advantage that there are tools which let you record and play how you have flown. While you play that "track" you fly another aircraft.
That way you can create things like this.
Might still be they did it another way.

These are from the series "Dogfights" from the History channel

from what Ive seen hey dont use a video game and render all the footage themselves.

They mostly seem to cover american pilots, but there are two others, one featuring the hunt for Bismark and the other Israeli aces.

I've no idea how those are done, but I think the aircraft look much better than any game I've seen.

It's a pity the aircraft are shown flying line astern. Doesn't look realistic. I don't know the actual dogfight but that doesn't seem to fit with WW2 tactics, be they German or USAF.
