I have some questions about making profiles:
How big (how many pixels from spinner to tail) should the profile itself be for good print quality? If I make a profile, could I pay Phoenix art to print it
for me?

That's a good question. But it depends GREATLY on the size you print it. If your end print with be a full size 4 color CMYK offset, like books and magazines have, you will want your image to be at least 300 (if not 360) pixels per inch, that's printed full size. So, if you've got a 10 inch profile, it needs to be at least 3000 pixels across. (at least that's as it was last time I had anything to do with book printing)
For any other kind of printing, like desk top printing, pre press proofing or whatever other means, it depends on the machine. Then you need to know the specifications of the printer you will use. Chances are 300 dpi will be good enough for just about anything 
MIND YOU, that's the WHOLE image, not spinner to tail. In other words, when printing, the whole dimensions count, not just the object and minus the white space around it. So, if you want a 12 inch print of your plane, with a 1 inch border on each side, you image should probably be 4500 pixels across. That's 15 inches at 300 pixels per inch.
***BUT if Jester and crew do print it for you, they will know precisely what size they will need
