Both are excellent, but not for the faint of heart!

Hello All,
I know this is a bit OT, so please forgive me. I read with interest the MAW website description of the add-on that they had modified the Flight Model of the aircraft in MAW. There was also the description of CFS3 as 'Open Source', which to me implies a certain possibility of editing by those who are not coding experts.
Question: is my understanding of this term in this case correct? Are there tools available to the general public to edit the properties of CFS aircraft models? I know one may skin objects and even landscape, but I had in mind here the editing of fundamental properties of the aircraft (FM, various data, phys, etc.).
Thanks, and back to skinning matters!
