Realistic repaints?
Or at least high quality like McPhats for FSX.
Anyone know the trick or technique?

Wow, some beautiful work there.
My guess would be that is application of real photographs, with great care given to blending them together where the different photos and aircraft surfaces join. And then it looks like key areas are transferred to bump mapping to tie it all together with the sim's own lighting.
Doing this yourself would mean having the photos to work with in the first place. Taken under even lighting, without intruding shadows. For *every* surface. That process, in and of itself, is probably both skill and an art!
